So "j'aime" means "I love" but J'aime bien" means "I like"? It would seem more, to me, that to "aime bien" would be more than just to like but is this just idiomatic?

Even though it might seem to you that way, that's not the way French speakers see it.
Between persons, aimer means "to love someone (romantically)" and aimer bien "to like someone".
