Just to repeat what's been said in the linked posts already: la soif and la faim are nouns. Therefore you are having them instead of being them. In English, "thirsty" and "hungry" are adjectives. Therefore you're being them and you're not having them.

No, the exception for "avoir" (to have) when expressing hunger and thirst ("avoir faim", "avoir soif") doesn't apply to all human emotions or states, but it does extend to other sensations and feelings like being cold, hot, right, wrong, or having a need/desire.
