"Les enfants demande à leur mère de leur raconter ce qu'ils doivent manger pour être forts. "

Can anyone tell me whether the expression is être fort or être forts?? Or if both are acceptable, then when should I use each form?

Whether it is fort, forte, forts or fortes depends on number and gender of the noun it refers to. In the example you post, it is "les enfants", which is masculin plural: hence "forts".
