In the examples, there is this sentence: "Ma tante est passée par la boulangerie en venant ici." In the sentence, what purpose does the "en" serve?

Grammatically, en venant is a gerund. It is constructed with -

 en + present participle

and modifies a verb (in this case passer). You can read more about it here:
