When asking a question shouldn't we use (f.i.) "Aurez-vous ...?" instead of "Vous aurez ...?" ?

Bonjour Jose,
When a question is formed without the use of the other «prefixes», i.e. est-ce que, qu'est-ce que, etc. there are two ways to ask:
1) inversion of the noun and verb which is the first example you gave, the lesson is below:

2) the second is tonal inflection, much like in English, the lesson follows:
https://progress.lawlessfrench.com/my-languages/french/view/501
So, given your question, both forms are correct. The take away here is this: whichever form of the interrogative you are more comfortable using will be the correct one.
J'espère que ma réponse vous aiderait.
Bonne chance et bonne continuation dans vos études en français, la langue de Molière et qui a été utilisé par le monde français depuis l’époque d’Hugues Capet
