why does cuvees instead of les cuvees

if the English had been  ' create the special cuvées for the occasion ', the use of ' les cuvées .. ' would be correct. 

However, the English here has been translated as meaning ' create ( some ) special cuvées for the occasion ' presumably, and reasonably in my view, on the basis that dropping ' some ' is common in English, while dropping the definite article ' the ' is not common. 

In French, the indefinite/partitive article cannot be dropped and the implicit ' some ' of the English sentence becomes ' des ' here.
