In the quiz I got 'Elle trouve ________ beau'. I answered: que t'es. However, this was counted wrong and instead it should be que tu es. Would my contraction be incorrect?

Usually, “tu” is never elided, though you may use the contracted form of ‘tu’ in very informal everyday speech (preferably when talking within a family setting).
Saying, “que tu es beau” seems elegant and hence is more acceptable.

The subject "tu" will not shorten. What ever shortens to "t' " is te, the pronoun.
