Why are we saying la veste que je vous ai acheté and not la veste que j’ai acheté de vous?

Vous is the indirect object pronoun - normal positioning of object pronouns in French. The verb form is “acheter qqc à qqn “ -to buy something from/for somebody. Yes, it’s ambiguous without context. It is never “acheter de” in French

Just a small nit-picky remark: it is la veste que je vous ai achetée. La veste is the feminine COD and precedes the participle.
