For this exercise, A Thanksgiving gift, I have searched for turkey, and according to Google, there is dinde, the feminine for turkey and dindon, for masculine. I know in English they don't have genders. My question is, should we put the correct gender in French?

In French, when you're talking about the turkey that you eat (at Thanksgiving or Christmas for example), you're going to use "la dinde". "Le dindon" is pretty much always used to refer to the male farm animal.
Also, French is very strict with genders in grammar. Therefore, you should use the correct article / agreement depending on the expression you're using.
