One difference between "entre autres" and "parmi d'autres" is that "entre autres" emphasizes the importance of the thing already mentioned ("notably" or "in particular") while "parmi d'autres" suggests it's just one of many.
This is a very good question. The quick (but not always correct) reply is to say entre = between and parmi = among. Or, you might also hear that entre is used with a group of two and parmi with larger groups.
This is probably 80% correct and a good place to start.
