Unfortunately, there isn’t a trick to remember the inversion of the verb when asking questions. Practising exercises on forming questions is your best bet. And you’ll get it!

Regarding “qu’est-ce que…?”, it is never followed by the inverted form when using subject pronouns. See link (end of lesson): questions-starting-with-que-to-ask-what
Qu’est-ce que tu manges ? = What do you eat?
Qu’est-ce que vous pensez ? = What do you think?
