it seems someone would give "plusieurs" fleurs but there would be "de nombreuses" fleurs in a field.

plusieures -- severlnombreuses -- many
So you are correct.
A maybe descriptive way to express this would be: le champ est couvert de fleures. -- the field is covered by flowers. ;)
