«Jouer à cache-cache» ?

Why does one say «jouer à la marelle» and «jouer au chat», but omit putting in an article and instead say «jouer à cache-cache» ?

Because "cache-cache" is actually a repetition of the 2nd person of the present imperative of the verb cacher, something like "hide you! - hide you!". It is not a french noun in need of an article (like LA marelle), it is a verbe structure.
