I think that it may be a bit long winded but could I have said “jusqu’à ce que le jour où Jean Valjean s’enfuie avec moi ?

 I am afraid not as it is incorrect.

You could say -

'...jusqu'à ce que le jour arrive où Jean Valjean s'enfuie avec moi'
