This is more of a cooking question than a linguistic one but, in the sentence that starts, "D'abord, enlevez l'emballage ...", is it's the actual sausage casing that is meant here, or is it the marketing package that's meant?

Sydney, 

the casing, or skin, of the sausage is commonly referred to as ‘ la peau du saucisson ( lyonnais ) ‘  and it would also be , for example, ‘ la peau de la saucisse de Toulouse ‘.  Emballage refers to the packaging ( for sale of the finished product ), as is used in the original English script.

The original recipe in English obviously assumes no knowledge of cooking when it gives the first instruction as ‘ remove the packaging ‘. Not too many French cooks would need that instruction !
