Would there be anything wrong with saying 'Nous n'avons pas du tout été déçus' ?

Either is correct. Splitting «(ne ) pas du tout» is 'optional', not obligatory. This holds for other negations emphasised with «du tout», such eg (ne) rien du tout; (ne) plus du tout. Some references suggest different positioning of «du tout» further modifies the emphasis, but as far I can ascertain that difference is minor compared to including «du tout» in the first place.
