So many questions!
Where do I even start with this one? ;)
“ L'Incroyable au chocolat blanc et au spéculoos, L'Impensable au café, L'Excentrique à la cerise... Miam !”
Is this structure a bit like a phrase, or poetic speech? Why the capitalisations? Why “l’ au ”? And what are spéculoos?

Hi Brian,
These are the names of the 'spécialités de la maison' so they become proper nouns.
A 'spéculoo' is the little biscuit often served with cups of coffee in coffee shops -

They are capitalized because they are the names of three brands of taste. And a simple Google search will reveal what spéculoos are.
