Would it also be correct to say, "Elles dorment en s'enlacant."? 

(Sorry I know that the C is missing the cedille, here.)

Hi Shamrockhill, 

There is a slight difference between the use of the adjective 'enlacées' and the 'gérondif' 'en s'enlaçant').

"elles dorment, enlacées"

you could have said, 

".... heureuses, satisfaites de leur journée"

If you say 

elles dorment en s'enlaçant = they sleep while/ by hugging each other 

linking cause and effect rather than just description
