Why is it "le" + "day of the week"?

Why is the form "le + day of the week" used in this exercise? I thought that form was reserved for habitual activities done on a specific weekday, but since it's a vacation it seems like they're telling us what they are doing in the upcoming week only.

In this exercise, le + jour de la semaine is used because it refers to a specific day/date during the vacation.

This confused me also, I thought the “Le”+ weekday applied to *literal* use of date, like “Sunday June 12th we fished for guppies”.  If it’s simply a matter of inferring a date from the conversation, couldn’t most day-of-the-week mentions also be “placed on a specific date” from context?  If I say, on Monday the 16th “I went spelunking Friday,” couldn’t one infer I went specifically on Friday the 13th? This rule confuses me excessively.  (Would the “le” only apply if I specified vendredi dernier?)
