The quiz asked me to find correctly placed adjectives and I thought colors are supposed to go after the noun? Unless there is a exception here i missed.

Bonjour Jan,
You're right: "une violette ceinture" is incorrect. I checked the test questions from this lesson and it is recorded as such. You may have read your Results board incorrectly.
Je porte une ceinture violette = I am wearing a purple belt
Je suis ceinture verte = I am a green belt (judo/martial arts etc)

The only situation that comes to my mind would be when the term relates to a rank.
By rank I have in mind the belt rank (level) in some Martial Arts for example.
