It looks like the listing in the lesson does not cover this particular point.

A white mare  --> Une jument blanche (Cheval is a male horse)

As you might know, the language for horses can get pretty complicated depending on how much someone knows about horse ranching, breeding, etc. 

In English we have the word "horse" which is a general catch-all descriptor. But there is also stallion, gelding, mare, yearling, etc if someone needs to get specific.  

The word "horse" maps to "un cheval". The noun is masculine but refers to 'horse' in general.  

If you want to specifically refer to a "mare", yes, the word is "une jument" and adjectives have to agree with the noun.  

For specific male horse names:
stallion: un étalon
gelding: un cheval hongre
