Why is it une salade de fruits and not une salade des fruits ?

Hi Gojo,
The 'de' here isn't a partitive but the preposition 'de' -
salade of fruits = fruit salad
salade de tomates = tomato salad
salade de pommes de terre = potato salad
salade de riz = rice salad
etc.
it just describes what it is made out of.

The preposition de means that something is made of a certain material or ingredient:
une jupe de cuir -- a skirt made of leather, i.e., a leather skirt
une salade de fruits -- a salde made of fruit, i.e., a fruit salad
