why is it j'ai eu plus de mal avec rather than du?

Also, why is it EU instead of AVAIS...

The phrase is avoir du mal avec qqc.
J'ai eu plus de mal avec qqc -- I had more trouble with something.

Regarding choice of tense: if you are stressing a single occurrence, then you use passé composé. A general statement or one stressing duration or repetition would use the imparfait.
