As in:
Le roi de la jungle = The king of the jungle
Le roi de la danse = The king of the dance
But Louis XIV was known as

Could be wrong but I think Roi de Soleil would literally translate as King of Sun whereas Roi Soleil is just sun king with the usual french habit of inverting words.
