Hi Martin,
As Maarten says, there is not always a reason to explain how a language works but what you need to know is that the pronouns used after prepositions ( including chez) are called emphatic or stress pronouns.
Take a look at the following Kwiziq lesson -
Moi, toi, lui, elle, soi, nous, vous, eux, elles (advanced stress pronouns)
Je vais chez elle = I am going to her house
Ils vont chez eux = They are going to their house ( home)
Je suis chez moi = I am home

"Why" questions about fundamental grammar rules are generally unhelpful - the answer is almost always 'because that is the way it is'. Don't try to read the French with the English translation in mind, to make the 2 match - that the French use 'chez' followed by stress pronouns or nouns is the important point, and learning how and when to use 'chez ...' in French communication.
