I understand "des escargots" but then why is it "les vins" ? He tasted [some] snails... we drank [all the] wine?

"we drank delicious wines and he tasted snails":
You will use "les" in front of "escargots" -> generalising / general statement

You will use "des" in front of "vins délicieux" / "de" in front of "délicieux vins"-> [some] delicious wines / partitive article
