Why is this not “ Mon père et vous vous êtes-vous ennuyés hier soir ?”It’s a lot of “vous”, but it seems more consistent to me to “vouvoyer” throughout.

Hi Brian, 
It all depends on who the other person is.
If you were speaking about your father and your uncle you would indeed say -
Mon père et toi vous êtes-vous ennuyés hier soir ?
Talking about your father and his neighbour,  for instance, you would say -
Mon père et vous, vous êtes-vous ennuyés hier soir ?
Simply a matter of who the other person is.

S'ennuyer.    Therefore we need "Mon père et toi êtes-vous ennuyés hier soir ?"Vous vous ennuyez --> vous ennuyez-vous? The first vous - subject (Mon père et toi) the second - object.
