Purpose of ‘en’

The pronoun "en" refers to "gros fromage" -> "pour récupérer le fromage fondu qui vient du gros fromage" (= to take the melted cheese which is coming from the big block of cheese).

The whole sentence is:
"C'est un gros fromage sous un fil chauffant, que l'on racle à tour de rôle dans nos assiettes pour en récupérer le fromage fondu."
I think that en is used to indicate de nos assiettes ("récupérer le fromage fondu de nos assiettes"). However, I still struggle with correct usage of en and y, so confirmation from someone more knowledgeable would be appreciated.
