Isn't the sentence ---c'est le début de Hanoucca a general statement and should take Le samedi?

Bonjour Ann !
You will use le samedi to express on Saturdays - every Saturday.
In the case of Hanoucca and similar celebrations always starting on "a Saturday", you can also use un samedi.
Hanoucca commence toujours un samedi.
But when the sentence simply refers to a one-time event:
On (this) Saturday, we played football.
Samedi, on a joué au foot.

Le samedi is used for recurring events that happen on Saturday, i.e. Le samedi je joue le foot, le dimanche je vais à l'église.
