Should there be a definite article to separate ‘Tu' and ‘en' so it might become 'Tu l’en achete?" Otherwise it feels awkward making the liason between Tu and en, because ‘tu' ends in a vowel just as ‘en' starts with one.

No, not in this case, there's no need as Tu and en are quite separate and the only liaison will be between the -n and the -a of achètes.
