In the phrase ....elle fait une bonne tarte aux fruits et elle invite des amis pour le gouter...shouldn't 'le' be 'la' because it's a pronoun substituting for 'tart' which is feminine?

Partitive articles

We are told that partitive articles become de or d' in negative tenses. Yet in Aurélie's Chrismas quiz 'il ne veut que de la bûche' is given as a correct answer.

Please explain.

My second question on the test referred to Devonshire, which I assumed to be feminine. After taking the test, I found an explanation that all English countries ending in shire are masculine, but I don't believe it was mentioned in the material of the lesson before the test. If I'm correct that is was not explained beforehand, it doesn't seem like a good question.

I was always taught that then definite/infinite articles when followed by a vowel a apostrophe is used. Why not with "onze" in the case?
