So am I to assume that all pasta dishes [spaghetti has come up in other exercises] are considered countable and thus the "des", while bread is uncountable and thus the "du"?

Hi Mike,

Yes,

In French the generic term is 

des pâtes = pasta 

also 

des spaghettis spaghetti

des maraconis = macaroni

etc 

But 

du pain bread
