In the English audio for this lesson, the speaker says ‘sad’ instead of ‘proud’. Please amend it.

Bonjour Madame,
In this quiz , there is a sentence as "surtout quand elle détache ses longs cheveux roux."
Here, I am puzzled as to why possessive adjective is used with a body part but there is a lesson which contradicts by advising to use definite articles. Is this an exception ?
Secondly, why is 'roux' used for red ? Why not "rouges" ?

Don't both parts of a negation (ne + plus/jamais/que/etc) usually go before the participle?
I'm reading an example using merci de with an action already done. It says to use Merci de + [Infinitif Passé] and gives the following example:
C'était très difficile, merci de m'avoir aidée.
Please, can you explain why aidée is feminine?
