Why "Je vais chez le boucher" and not "Je vais au boucher" when for going to boulangerie and marché, the answers are " je vais à la boulangerie" and "je peux aller au marché"? Are there certain places we need to use "chez" instead of "à"?

Bonjour forum et les experts
Mon question se réfère à la phrase 'Ça a dû être particulièrement difficile pour la pauvre Christelle' Je n'ai aucun problème avec le phrase. Je demande juste si c'est également possible de l'écrire, 'Ça doit avoir été particulièrement difficile pour la pauvre Christelle'?
Et si no, pourquoi?
J'apprécierai votre aide
What's the difference between le verbre aller et aillent? Is it the same verb, different tense? Or am I way off and it's just pronounced aillent?
