In the question 'Tu en connais des mamans calmes ?' what is the function of 'en' ?

In the full passage answer text, 'je vais prendre un coca' is given. In the test, it suggests one uses Le Futur Proche, as here, but then marked it as not the best answer and provided the best answer in the Future Tense ie 'Je prendrais'. Much confusion!
Penultimate prompt is in fact for the last sentence.
Using the term non-verbal here is very confusing, as it seems like you are saying it should only be written and not spoken. Perhaps you could change it to read nominal sentences? A nominal sentence is one without an expressed verb. It would avoid the confusion.
So you only use va/vont? And do you conjugate with the person or the object?
Eg la rose va a ma sœur - is it la rose or ma sœur that is triggering these use of va?

Isn't saying "Il fait du soleil" saying 'it is sunny?' Sunny being an adjective?
I was always taught (from textbooks, profs, etc) to use "en" with French countries/states/provinces that end in -e or start with a vowel sound and are singular. "Aux" with plural names, and au for the rest--with the exception of Mexique which uses "au" though it ends in -e. Oh, and à with cities.
Is this "dans le" thing a change in how the language is done or a regional peculiarity or what?
